One of the most versatile foods in my opinion is chicken- shredded chicken breasts, that is. It works great in so many recipes. The only problem with shredded chicken is you have to boil it for nearly 2 hours, then let it cool, then pick out all of the gooey parts, and then shred it! It's a several hour process.
In order to have this high-preparation item available in a snap (thus allowing me to cook a larger variety of meals at a moment's notice), I buy large family packs of boneless, skinless breasts and boil them in a large stock pot all at once. Then, I shred all of the chicken at once and put it into 2 gallon size freezer bags. All you have to do to break it up is toss it against the counter, like you would a bag of ice.
Now I can reach in and grab a handful for a quick chicken wrap for lunch, grab a little more for a casserole, or pour in the whole bag for a pot of chicken and dumplins'!
Oh yeah- you also will want to freeze the broth from the chicken in quart size bags... this is basically free chicken broth, which is obviously better than buying any (and you really know what went into your own broth vs. canned!). My favorite part is when I want to make our favorite meal, chicken and dumplins', I just throw 2 bags of chicken broth, a bag of frozen chicken, and a few extra ingredients and I've got chicken and dumplins in a quarter of the time!
Having this chicken at my disposal helps me make nutritious meals more often instead of reverting to a frozen or ready-made boxed dinner when I'm in a hurry. I can whip up some delicious chicken quesadillas in 10 minutes, flat!

Awesome that you said to save the chicken broth. I always do this too. Great tip!
I cook my BLSL chicken breasts in the crock pot. Just toss in the contents of the freezer bag, turn on high for 4 hours. Shred, package and freeze.
